"Healthier" Chocolate Chip Oatmeal Cookies
Ingredients:
• 1 Cup non-hydrogenated vegetable oil spread or butter.
• 1/2 Cup granulated sugar.
• 1/2 Cup brown sugar.
• 1 tsp vanilla.
• 2 eggs.
• 2 Cups 100% stone-ground wheat flour.
• 2 1/2 Cups blended oatmeal.
• 1/2 tsp salt.
• 1/2 tsp baking powder.
• 1/2 tsp cinnamon.
• 6 oz. chocalate chips.
Instructions:
1. Cream butter, sugars and vanilla.
2. Beat in eggs until light and fluffy.
3. Add remaining dry ingrediants and mix thoroughly.
4. Stir in chocate chips and drop by spoonfuls onto foil-lined baking sheet.
5. Bake at 350 degrees for 6 to 8 minutes.
Variations:
Substitute carob chips for chocolate chips.
You can use any organic substitutions.
Note: Cookies will not flatten during baking. For a flatter cookie press with a fork prior to baking.
